Happy Mother's Day from the meat department including some recipes!

Mother's day is just around the corner and it's time to start thinking about making Sunday special for your Mother, or the more immediate Mother in your life.

Looking for breakfast /brunch? Fish Brothers Cold Smoked Salmon Lox is a great way to the start the day. Spread her favorite savory Bagel with cream cheese add some capers, a couple of slices of red onion and a few slices of Lox and you've got a simple delicious way to bring a smile to her face,

If you're looking for something that's simple but looks like you slaved away in the kitchen for hours, here is a recipe for a simple but elegant Chicken Pinwheel.

4 oz. chicken breast, boned, skinned & pounded to 1/2 original thickness

2 tsp. lemon juice
Dash of each onion powder, allspice & cinnamon
1/2 tsp. dried mint
Pepper to taste
2 tsp. lemon juice & paprika to coat the chicken before baking


Mix the spinach, 2 teaspoons lemon juice, onion powder, allspice, cinnamon, mint and pepper. Spread mixture over entire surface of the pounded chicken breast. Roll "jelly roll" fashion. Secure with toothpick. Sprinkle entire surface of chicken roll with lemon juice and paprika. Wrap in foil tightly and bake in preheated 350 degree oven for 30 minutes. Serve cold. At serving time, slice chicken into pinwheels and arrange attractively on plate. May be served hot, but doesn't slice as attractively.


Seafood would also be a great light meal for your Mom in question. Trollerpoint Scallops are always a great treat. Some Texas Gulf Shrimp in Scampi or an Alfredo sauce would make a fantastic dinner. I like adding blue cheese to my Alfredo. It's hard to go wrong with Salmon. If you want to use your strengths with the grill, Trollerpoint Coho Salmon Steaks or Filets are a great way to impress.

Stuffed Beef Tenderloin


  • 2 tablespoon butter
  • 1/4 cup chopped shallots or yellow onion
  • 1 cup chopped fresh mushrooms
  • 1 (1 1/2-pound) beef tenderloin
  • Salt and freshly ground black pepper
  • Soy Sauce, to taste


Preheat oven to 400 degrees F.

In a medium skillet, melt the butter and cook the shallots or onion over low heat until tender, about 5 minutes. Add the mushrooms and cook over low heat about 5 minutes or until the liquid is reduced by half. Let cool.

Butterfly the beef tenderloin by cutting the beef lengthwise down the center to within 1/2-inch of the other side. Set the beef aside.

To stuff the tenderloin, open the beef and sprinkle in the inside with salt and pepper and rub with soy sauce. Spoon the mushroom mixture down the center of the tenderloin. Bring the 2 sides of the tenderloin up and around the filling to meet. Using butcher string, tie the tenderloin together at 2-inch intervals. Place the tenderloin in a roasting pan.

Roast for 40 minutes for medium rare. Let stand for 10 minutes before slicing. Slice about 1 1/2 inches thick.
