The Wisconsin
Sheep Dairy Co-op is a premier maker of artisanal sheep’s milk cheese and the
only sheep dairy cooperative in the United States. Comprised of 15 family
farms, the co-op was founded in 1998 with the goal to establish a stable market
for and supply of the highest quality sheep milk available. A cooperative also enabled
the growing number of family sheep dairies to collectively market their milk
and to obtain better pricing on sheep dairying equipment. There are
approximately 15 member farms varying greatly in size from small family dairies
up to 100+ acre farms milking hundreds of ewes.
Dante Lamb
Made
from lightly salted curd and aged to develop a flavor similar to a Spanish
Manchego, this 100% sheep's milk possesses a mild, pleasant flavor. Dante Lamb has ideal melting qualities for
