New at Wheatsville


Bottled vegan coffee beverages, new varieties of Bulk flours, less-sweet sodas aimed at the adult palate… We work hard to seek out exciting new products and flavors we think our members will love. Here’s what’s new at Wheatsville this week. 



Seattle-based DRY Soda Co. has re-imagined what soda can be: better tasting and better for you. DRY Soda uses only four, all natural ingredients and keeps the pure cane sugar to a minimum. New Bulk Flours
Three new varieties of flours in our Bulk department offer options for those seeking to limit their intake of gluten, or just experience the delight of cooking with a new ingredient.
(These flours are pre-bagged by us, but unfortunately, we can’t guarantee that they’re 100% gluten-free. If this is a priority for you, we carry these same varieties of flour in our packaged Grocery department.)

Almond Flour
Almond flour and meal are both just ground up almonds. Almond flour is most often made with blanched almonds (no skin), whereas almond meal can be made either with whole or blanched almonds. In either case, the consistency is more like corn meal than wheat flour. Almond flour is good in "quick-bread" type recipes, like muffins, nut breads, and pancakes (see recipes below). It's not good for foods such as bread that require a real dough, as it can't be kneaded. Usually, more eggs are required when baking with almond meal to provide more structure. Almond meal can also be used in breading fish, but care must be taken not to burn it.  Per lb, Reg. $5.69

Quinoa Flour
Quinoa flour is high in protein, with all of the 12 essential amino-acids represented. Use this delicate flour when baking. You can substitute half the all-purpose flour in many recipes or completely replace wheat flour in cakes and cookie recipes, sweet pancakes or waffles. On its own, quinoa flour is traditionally used to bake flatbreads, such as tortillas or nachos. Unfortunately, it is not possible to bake yeast breads using solely quinoa flour as it lacks elasticity. Per lb, Reg. $4.49

Coconut Flour
Popular among those adhering to grain-restrictive diets such as Paleo diets, or any grain-free diet, coconut flour can offer a gluten-free and protein-rich alternative to traditional grain-based flours. It is very high in fiber, low in digestible carbohydrates, and a good source of protein. It lends baked goods an incomparably rich texture and a unique, natural sweetness. You can replace up to 20% of the flour called for in a recipe with coconut flour, adding an equivalent amount of additional liquid to the recipe.
