I hope that you are having a most excellent week and that you have some fun plans cooked up for this Memorial Day weekend! Traditionally viewed as the start of summer, Memorial Day is also a chance for folks to honor those that have given their lives in service to our country. So, whether you have a picnic or trip to the lake planned or are going to a remembrance service or a parade, I hope that the holiday is a good one.

The Deli's Rocking A Slew of Sides for Your Memorial Day Celebration!

 

Memorial Day weekend is upon us, and there's nowhere better to stock up on all your picnic and grilling sides and salads than your Wheatsville Deli! We'll have all sorts of fresh and tasty potato, pasta, grain, bean and veggie dishes to satisfy both the strictest vegan and most committed omnivore! A plethora of summertime favorites will be on hand for the taking, leaving you nothing to do but pack the cooler and, if you're so inclined, to fire up the grill!

We intend to go all out to make your picnic perfect, and will have a wide variety of choice salads in our Deli Case for you to sample and pick all of your favorites! Choose from dishes like our sweet-n-spicy Chipotle Potato Salad, classic Picnic Potato Salad and creamy Vegan Potato Salad! Three-Bean Salad is an old-school winner, and Black Bean Mango gives a nod to the southwest! Round out the sides with customer favorite Cashew Linguine, classic Picnic Macaroni Salad, and delicious Ginger Tempeh Pasta! Our chockfull of goodness Alpha Omega Salad, pilaf-style Savory Basmati Rice and Spicy Mango Quinoa will not disappoint! And you can't go wrong with veggie salads, like the raw Lively Beets & Carrots, Meme's Coleslaw, crowd-pleasing Broccoli with Cashew Tamari, and Sumi Salad!

How about seasoning or marinade? It's my belief that with quality beef you don't need a marinade. Seasoning is very important. While I make my own blends from our great selection of bulk spices, I can recommend the Szedge brand of spices located on isle 1 next to produce. They make one for every kind of meat. Just follow the seasoning directions (can take up to 24hrs, so plan ahead) and enjoy great results.



 

Maybe you need something easy? Let us do the work for you. In our "quick-to-fix" case we have some new items that are really winning over the customers. Pick some up and see what they're talking about.

We have the cheeses to complement your main courses for Memorial day. We have slices for your burgers and sandwiches and shreds to top your fajita tacos and hot dogs. Looking for burger ideas? You should check this site out http://www.cheeseandburger.com/.  The Sheboygan burger is not for the faint of heart.  We also have blues, fetas and fresh mozzarella for your salad eating pleasure. We still have Manchego on sale through the end of this month for $13.69/lb, regularly $16.29/lb. Also our Organic Valley Italian and Mexican Shreds are on sale for $3.99 each, regularly $4.99 each. If you are looking for an appetizer to keep the natives from getting restless, try Manchego and pineapple sautéed together in olive oil. It is easy. Heat oil on low heat, you don't want to burn the cheese. Once oil is heated throw in cubed Manchego (I cut the rind off). When the Manchego starts to melt, throw in finely chopped pineapple.  Stir until cheese and pineapple is fluffy, which will be around 3 to 4 minutes.

 

In the Frozen Department

Butternut Squash Dumplings with Sausage & Kale



Coarse salt


1 pound dumplings (cavatelli) purchased from Pasta & Co.
(but any shelf stable gnocchi, raviolis, or tortellini can be used.). 

2 Tbsp olive oil 


1 lb Richardson's pork sausage (round link)


1 large onion, sliced lengthwise


3 cloves, garlic, sliced


1 tsp red pepper flakes


1 bunch kale (any type of leafy green will work)


1/2 cup white wine


2 cups organic chicken broth



Bring a large pot of water to a boil, salt the water, and cook the cavatelli (approximately 3-3 1/2 minutes, until dumplings float). 
While the water is coming to a boil, heat a large skillet over medium high heat, and place the sausage in.  Sear sausage on one side for 10 minutes and then flip over, cooking another 10 minutes until done.
While sausage is cooking, prep the onions & garlic.
Remove sausage from skillet and set aside. Saute onions & garlic in hot skillet adding red pepper flakes, salt, and black pepper.  If there is not enough oil left from the sausage, add 1-2 Tbsp.  Cook for 4-5 minutes.  
While the kale is cooking down, cut the sausage into bite size pieces.
Add the kale, toss to wilt.  Add the chopped sausage back into skillet. Add the wine and cook for 1 minute, then add the chicken stock and cook for another 4 minutes.
Add the cooked and drained dumplings, mix in.

 

For a vegan alternative to sausage in this recipe, try Field Roast's Sausages http://www.fieldroast.com.  We have Mexican Chipotle, Italian and Smoked Apple Sage for $4.99 for four huge links!  The Smoked Apple Sage would compliment this dish perfectly.  Since it is fully cooked and only needs to be heated, adjust the cooking times accordingly.

The Board is ramping up its annual election process, and the Nominations Committee would like to invite all Wheatsville owners to think seriously about running for a seat on the board. This is a different kind of leadership opportunity than you can find at any other organization. As a board, we are charged with acting on behalf and for the benefit of the owners of our co-op. We do this by using an incredible governance system that facilitates our leadership by focusing our energies on the "big-picture" questions, leaving the work of running the grocery store in the hands of Dan and his incredible staff. We have the great privilege of working for you, a diverse and passionate group of people who have invested in a business you believe in.

Members of the board serve three-year terms, receive a discount on purchases, and help to change the world in which we live through the perpetuation of co-op values and principles.
