Local Meat & PoultryWheatsville is now stocking Maple Leaf Farms White Peking Ducks. They are antibiotic free and certified humanely raised by their Trident Stewardship Program. Find recipes and learn more about Maple Leaf Farms beliefs and farming practices on their website. We can offer boneless breasts and leg quarters as well as the whole bird. Remember, when roasting a duck it needs to be elevated in your pan or pot. Ducks have a lot of fat, and it renders while roasting. Duck fat is also very delicious. I recommend using every drop of your rendered duck fat. One way to use it, and this is pretty decadent, is to make risotto while roasting and use the duck fat for your risotto liquid. French fries fried in duck fat are also amazing. Don't forget to stock up on some freezer items for Owner Appreciation Days. Take a chance on trying out that Windy Hill Farms Goat Stew meat you've been waiting to try. By all means pick up some of the Brangus Grass Fed and Grass Finished Ground Beef or Stew. This beef is incredible. Not only does it taste great, but it is being raised responsibly for the greatest health benefits to those that eat it and raise it. These are limited supplies so stock up. The Applegate Farms Great Organic Hot Dog has moved to the freezer for a much better price of $6.99. Keep an eye out for the Dewberry Hills Chicken. We love Jane and Terry and what they are doing to raise a great local chicken. We have recently started selling fresh livers and hearts and chicken feet. Dewberry Hills is a smaller farm than Buddy's and these parts are somewhat limited. If you want us to put some aside for you, feel free to call, otherwise, they come in on Wednesdays and are usually gone by the weekend. Kidding SeasonThis time of the year is kidding season for most goat dairies. Cheese production wanes because the majority of the milk goes to feeding the kids. Also if the does are not allowed to breed there will be no milk production later in the year. The cheese produced with this milk is creamier and richer because of the increased butter fat. So expect to see decreased levels in our stock of Wateroak and Pure Luck goat cheeses. We are lucky enough to have received a small order of Pure Luck Dairy's cheeses. The spotlight is on food co-ops for the world premiere of Co+op, stronger together's video series celebrating 2012 International Year of Cooperatives and hosted by celebrity chef Kevin Gillespie.
