Fresh in the Deli



Our new Fresh in the Deli recipe this month is Black-Eyed Peas with Butternut Squash. Co-ops chefs from around the country share their favorite seasonal recipe with your local co-op for this regular feature. Featuring tender black-eyed peas, corn, jalapeƱo pepper, tomatoes and chunks of butternut squash, gently seasoned with cumin, coriander and chili powder. Delicious warm or cold!

Have you tried our Deli’s Raw Deal Salad? We are really excited about it! This good-for-you vegan and raw shredded salad is chockfull of powerhouse ingredients like kale, spinach, carrots, walnuts and pumpkin seeds tossed in a dressing of olive oil, lemon juice, mint, oregano, garlic and jalapenos! This Raw Deal will do your body right!

Fruitful Hill Farm Local Eggs, Smithville, TX
Ringger Family Farm started in Bastrop County in 2002 with a primary farm enterprise in raising pastured laying hens, along with a few dairy and meat goats. The chickens are moved about once a week to a new section of pasture so they get new grass and bugs to eat, in a method known as rotational grazing. An "egg-mobile" is moved along with the chickens so that they have a place to lay the eggs, and some protection from the wind and sun. Moving them across pasture also provides for a more evenly distributed return of fertilizer to the soil. Their diet is supplemented with high quality, high-variety feed and organic vitamins and minerals; no chemicals or hormones are used on either the chickens or the pasture. Sierra Nevada launched a beer brewer's fantasty camp back in 2008, inviting fans from across the country to its Chico, Calif., brewery for a two-day Beer Camp. What started as a monthly occurrence is now held almost weekly. Under the direction of Steve Grossman (brother of Sierra Nevada founder Ken Grossman), participants taste beers, learn about the brewing process, shovel malts and hops, work the bottling line, and create a unique group beer. Every year, the brewery picks four of these experimental ales for its Beer Camp Variety 12-Packs – three bottles each of four different styles:

Sierra Nevada Oatmeal Stout (9% abv)
This big oatmeal stout is midnight-black in color-with a big roast-y, mocha-like aroma. It has a silky body from the use of rolled oats, and a round and lasting finish. Perfect as an after dinner treat.

Sierra Nevada Imperial Red Ale (8.1% abv)
This Imperial Red Ale takes the intense hop profile found in a traditional double IPA and turns up the malt. It has big aromatic hop notes of grapefruit, peach and melon – balanced by a smooth and surprisingly robust malt body.

Sierra Nevada Imperial Pilsner (5.6% abv)
