Incredible Bulk, Owner Appreciation, Recipes, Samples and a Marching Band?!?!

Hello Wheatsville friends and fans!

I hope the winter has been treating you well and giving you chances to drink hot tea, bake or cook in your kitchen and snuggle up with loved ones!

 

We are super excited this week for a couple of reasons!

First, we're having our Staff Appreciation Party Thursday night. It's a great chance for us to show our thanks for the great work our staff do all year long and gives us a chance to have fun together! BUT, in order to make it happen, we do need to close a little early. We'll close at 9PM on Thursday so that staff can attend the party. Thanks for your understanding and support!

We're also excited because we appreciate you, too! This weekend starts Owner Appreciation Days. We'll give you a 10% discount off on one shopping trip of your choice any time between 1/15 and 1/23. Might I suggest you plan your shopping trip earlier than later? The last weekend can get pretty jammed up around here with last minute Appreciating, so you may have a more mellow shop if you do it sooner than later!

And, to induce you to come in early, we have some fun stuff lined up for this Saturday! We'll have lots of free samples throughout the store from 1-3 including a wine tasting! Then, at 3pm, we'll be joined by our friends the Minor Mishap marching band. They'll be playing for fun and to help promote the Wheatsville sponsored Honk! Each week our staff pick one thing that we're especially excited about and this week we want to extol the virtues of an entire department, one of our favorites, BULK Foods!

The Joys of Shopping in Bulk

So, we're going to share the joys and merits of shopping in the bulk department, especially for those of you who are new to bulk shopping, or who have never tried it before.

Buying in Bulk reduces waste! Its great to see more and more people concerned with reducing waste from packaging these days, and the best way to do this by far is by not using it at all.  By bringing your own containers from home (or making use of the re-usable containers in the department), and buying your staple needs in bulk, you can significantly reduce the amount of packaging you use on a day to day basis.  With all of the fresh hi-quality foods available in bulk, from nuts to cereals to candy to coffee, I think you'll be surprised by how much of you're shopping you can do this way.

Buying in Bulk saves MONEY! One of our favorite reasons for bulk shopping is the real value of it. There really is no more affordable way to live a healthy lifestyle.  When you get in the habit of basing the cooking you do at home around the dried organic options in bulk, such as quinoa or brown rice or red lentils, you'll be very surprised by how inexpensive a quality organic meal can be.  The ability to purchase just as much as you need for any particular meal makes it even more affordable and convenient.

Buying bulk is fun! Since you can buy as much or as little as you want or need, the bulk department offers up a perfect chance to experiment with new foods! Curious about Quinoa (keen-wah) Never had basmati rice? Interested in Israeli Couscous? Buy a little in bulk and you may find a new favorite!

If you've never tried it before, I think you'll be very pleased to find out how convenient and rewarding shopping in bulk can be.  If you're ever unsure about any product in the department, don't be shy to ask for a sample!  The bulk department really does offer a bounty of fresh and exciting options so please stop on by and check them out! New Local Goodness in Bulk

I'm very proud to announce that the bulk department is now carrying a great new product from the fine folks at Kosmic Kombucha.  It's called Kosmic Krunch and it's a delicious Orange-Cranberry flavored raw granola.  This granola is made with all raw Pecans, Medjool dates, grade B maple syrup and a variety of nuts and seeds, and it's great with yogurt or just on its own.  Kosmic Kombucha is a local Austin company making very high quality raw and vegan products and I am very happy to be carrying this tasty new addition of theirs.

I'm also excited to announce that Organic Walnuts are on Co+op deals this month for only $7.99/lb reg. $9.99.  This is a really great deal so be sure to stop on by the Bulk department and pick some up!

From Wheatsville owner Booka Michael's Rancho Pancho in Hunt, Texas, 
100% All Natural shelled pecans conveniently packaged in a "generous" one pound bag. These nuts are naturally dried for two weeks and husked by hand. They are SO delicious. Eat them out of the bag, toast them for your next salad, or use them to bake pecan brownies. He only has about 100 pounds to sell, so it's first come first serve. They are by the front door in the produce department next to the display of Kabocha and Delicate Squash. Bake a squash and add toasted pecans for a hearty winter treat! (When I brought these pecans home the other night, my wife and 5 year old literally cheered with delight.)

Sharpen it up on Cheese Island

Our New York Sharp Cheddar will be on sale for $6.99/lb, regularly $9.99/lb. Adam King, our produce manager, is raving about the Pink Lady apples.  A Sharp Cheddar and an apple with bite, sounds like a wonderful snack.

This Saturday and Sunday, January 15th and 16th, we will be hosting all store sampling days. Sampling will start at 1 p.m. and end at 3 p.m. Come sample some of our delicious products and meet some of our vendors.

From your Green Grocer

Our featured local item this week is Texas Organic Rio Star Grapefruit.  Such a great way to get a good shot of Vitamin C.  They're beautiful with deep red flesh – not too tart but with plenty of flavor, they don't need sugar.  Try one with breakfast!  I think they go great alongside a bowl of oatmeal.  Nicely priced at $1.59/lb.

Our featured seasonal item this week is the beautiful, antioxidant packed Organic Pomegranate. They're huge – almost the size of a softball – and so delicious right now.  Plus, they're a great price, only $1.49 each! They are a bit of a mess to eat, but rewarding!  Some people eat the seeds.  I usually chew on them a while until I've got a wad of them and then find a way to discreetly spit it out.  It's up to you.

If chilly weather makes you run for the kitchen, you're not alone.  Cooking up warm, comforting foods helps stave off the winter blues.  This week, we've got three great winter cooking ingredients on sale: Organic Acorn Squash for 99¢/lbOrganic Red Potatoes for 99¢/lb, and Organic Bunched Spinach for $1.29 each.

My favorite way to eat spinach is in saag paneer.  Fantastic over basmati rice, this creamy spinach dish will become a fast favorite.  I found an easy recipe athttp://www.indiasnacks.com/recipe/662/Saag-Paneer.php but once you've made it one or two times, it's simple enough to just wing it.

I love herb roasted red potatoes – they're easy and tasty.  I like to boil the potatoes whole until they're about half cooked – this reduces the time you have to roast them.  Then, you just let them cool, quarter them, coat with olive oil and some salt and pepper and your choice of herbs.  Pretty much any herb will be great – rosemary, sage, thyme, oregano, or dill.  Roast them till they brown.  Yum!

I found a great idea for using two of our featured produce items this week:

Acorn squash with pomegranate sauce.

The pomegranate sauce can be made by combining 6 parts pomegranate seeds, 1 part sugar, and 1/2 part lemon juice.  You can safely estimate these numbers.  If you like, you can add some pumpkin pie spices to this sauce: nutmeg, allspice, or cinnamon.  Cook on a stovetop, mashing the seeds as you go.  Simmer for about an hour, let cool, and strain with cheesecloth.

You cook the acorn squash normally: cut in half, scoop out the seeds, slice the squash, oil it and spread the slices on a baking sheet.  Drizzle the pomegranate sauce over the squash slices, cook for 15 minutes at 350 degrees.  Flip the squash over, drizzle again with pom sauce, cook for another 15 minutes.  It's done when you can easily insert a fork into the squash.

Cod fishsticks

Ingredients:
1 pound boneless, skinless cod
1 egg white
1/4 cup skim milk
4 slices dry bread
1/2 teaspoon pepper
1 teaspoon dried parsley
1/2 teaspoon paprika
1/2 lemon, cut into wedges

Directions:

Preheat oven to 475 degrees. Cut fish into 8 stick-shaped pieces. In small bowl, whisk together egg and milk until foamy. Place bread in a plastic bag and crush into fine crumbs using a rolling pin. Measure 1 cup of crumbs and combine with pepper, parsley and paprika. Dip fish into egg mixture and coat with crumb mixture. Place on a nonstick baking dish (or regular baking dish lightly coated with vegetable oil) and squeeze lemon juice evenly over fish sticks. Bake 20 minutes.

Driving for books!

The community action group for January is People's Community Clinic. Wheatsville is organizing a children's book drive for the clinic. The clinic is requesting gently used children's books for all age ranges – English, Spanish, and bilingual books are appreciated. You can leave your children's book donation in the bins by the front door all this month! Look by the registers or at the Hospitality Desk for brochures with more information about the wonderful work done by our friends at People's Community Clinic. Thank you so much for caring for our community and helping out!

Green Grocer's Greetings

I hope the New Year's treating you well, and 2010 got a good sendoff.  If one of your New Year's resolutions was to eat more home cooked meals, you've got plenty of company.  Eating out is more expensive, less nutritious and much less fun!  You can better control your portion size, and you know exactly what goes into your food, which can be good for maintaining resolutions.  Preparing a meal with friends or family is also a good way to wind down the day.  Lots of times, if I've rushed through my evening – meet up with friends somewhere, grab some food on the go – I find I've spent way too much money and require hours of "decompression time" before my mind will let me go to sleep.  One way to combine convenience with home cooking is to try our readymade stir-fry kits.  They're $3.99/lb, which serves two easily.  Combine it with rice, quinoa, or noodles and your choice of protein and you're all set!

Citrus season is still in full effect and this week we love the 4 pound bags of Texas Organic Juicing Oranges.  They're $3.99 each and every orange is juicy, sweet, and delicious.  They're great for juicing because they have a good juice to pulp ratio, but they're excellent eating out of hand, too.

With the New Year here, we are rolling out some new products.

First, in the Quick to fix case, we have a great new product. The Gorgonzola & Pesto Pinwheel for $12.99lb. is an elegant and simple choice for a quick, easy and delicious entrée. The Beef is from our local source for artisan style beef, Windy Bar Ranch. These folks have the experience and know how to raise cattle right. The Pesto we use is straight from the Wheatsville Deli. The pairing of blue cheese with beef is a classic choice, so the Gorgonzola fits in this pinwheel with ease. It is also simple to cook, Place in a 350 degree oven, 7-10 minutes per side. In the seafood case it's the return of oysters, they are awesome deep fried or in a soup.  Here is a recipe!

 

Delicious Oyster Chowder:

8 ounces salt pork or bacon,
cut in small strips
2 medium onions, in small dice
3 stalks celery, in small dice
10 cloves garlic, peeled and minced
2 medium bell peppers, in small dice
1/4 cup flour
1 quart clear chicken stock,
clear seafood stock, or oyster liquor
3 bay leaves
1-1/2 pounds potatoes, half of them cooked
and put through a ricer, milled, or mashed,
half uncooked but cut in small dice
1 cup heavy cream
3 pints shucked oysters in their liquor
Kosher salt and freshly ground pepper to taste
Hot sauce
1 bunch green onions, thinly sliced
2 tablespoons butter (optional)

Place a soup pot on high heat for 1 minute. Add the salt pork and cook to render for about 5 minutes, or until fat is clear and colorless, stirring occasionally. Add the onions, celery, garlic, and peppers, and cook for about 15 minutes or until vegetables are tender and onions are clear. Stir occasionally.

Add the flour, stirring constantly so that nothing sticks to the bottom during cooking. Cook for about 2 minutes or until the flour is well distributed and the mixture thickens. Add the stock and bay leaves and simmer uncovered over medium heat for 25 minutes. Add mashed potatoes, stir, and simmer for about 3 minutes. Add diced potatoes, simmer, and stir occasionally, cooking for about 25 minutes or until potatoes are tender.

Stir in the cream, bring to a boil, cook for 2 minutes, and add the oysters. Cook until the edges of the oysters curl, then season with salt and pepper. Spoon into serving bowls, add a dash of hot sauce and a sprinkling of green onions to each serving, and serve with a bit of the butter, if desired, floating on top.

Don't forget the Black-Eyed Peas!

All good Texans know that you MUST eat at least one black-eyed pea on New Year's Day to ensure luck and prosperity for the coming year. If you're knew to Texas, you might be scratching your head about this long-standing tradition. There are many theories on how the humble bean came to be held in such high regard but regardless of the origin of the custom, we recommend eating black-eyed peas because they taste good! At Wheatsville we are happy to offer fresh ones in the Produce Department, grown in Texas! Also, we have two varieties of canned BEP, organic and conventional, plus bulk and pre-bagged bulk for your convenience. If you aren't sure what the heck to do with them, try the following recipe from Emeril:

Hoppin' John Recipe

Ingredients

1 tablespoon olive oil

1 large ham hock

1 cup onion, chopped

1/2 cup celery, chopped

1/2 cup green pepper, chopped

1 tablespoon chopped garlic

1 pound black-eyed peas, soaked overnight and rinsed (or use canned and cooked for convenience)

1 quart chicken stock

Bay leaf

1 teaspoon dry thyme leaves

Salt, black pepper, and cayenne

3 tablespoons finely chopped green onion

3 cups steamed white rice

(Vegetarians can substitute vegetable stock for chicken stock and omit the ham hock)

Directions

Heat oil in a large soup pot, add the ham hock and sear on all sides for 4 minutes. Add the onion, celery, green pepper, and garlic, cook for 4 minutes. Add the black-eyed peas, stock, bay leaves, thyme, and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock. Adjust seasonings, and garnishwith green onions. Serve over rice. Enjoy!

Happy New Year!

I'm not much of a night owl anymore, so I'll probably be in bed long before midnight on the 31st, but I am planning on a day of relaxation on New Year's Day.  With breakfast, I'll be making mimosas with delicious Cara Cara Navel Oranges.  They're a bit more expensive than a normal navel, $1.49 per pound, but they are oh so good. They're sweet and very low in acid, but I wouldn't call them mild.  They have a much more complex flavor than a normal navel, and remind me of creamsicles – they have a flavor with notes of vanilla and cherry.  We've got them merchandized with Carousel Champagne in our front cooler.  Give it a try, you won't be disappointed!

New Year's wouldn't be complete without Organic Collard Greens and Black-Eyed Peas.  We've got the collards for $1.49 a bunch and fresh black-eyed peas, 12 ounces for $1.79. Eating black-eyed peas will bring you prosperity and good luck (and magnesium, iron, and protein) in the New Year, and the collards will bring you money (and vitamin C and fiber).

If you're anything like me, the New Year means coming off about six weeks of indulgence: family's been in town and you've eaten out too often, spent too much money, consumed more sweets than your dentist would approve of, drank a bit too much, and skipped out on the gym more than just a few times.  Well, let's put that all behind us and make some changes.  One easy thing you can do is pledge to eat more home cooked meals.  You save money, control your portion size, eat healthier, and spend more time with your family.  You might actually like it!  I recognize that sometimes you get home from a long day at work and spending another hour and a half in the kitchen just doesn't seem appealing.  Our cut fruit and veggie guy, Robert, has come up with an easy solution: fresh stir fry kits made three times a week here at the co-op.  They're reasonably priced at $3.99/lb, and a one pound package typically serves two.  Right now, they're a mix of bell pepper, onion, mushroom, and squash, but we're tweaking the mix as we go, so any constructive criticism would be appreciated.  You can throw in some stir-fry meat from the meat department, add a couple cups of rice or quinoa and you are set.  We make it easy on you – just dump it in the skillet and go!

CHEESE ISLAND

Are you throwing a New Year's Eve party? Attending a New Year's Eve party? I have an assortment of cheese trays to meet your snacking needs. I have a small and simple yet delightful small domestic cheese tray for $15. Also, we offer a large domestic cheese and fruit tray containing 5 domestic cheeses and seasonal fruit, for $50.  We offer 2 new trays. One tray is a Local Cheese tray. It is filled with offerings from Pure Luck Dairy, Veldhuizen Family Farms and Brazos Valley Cheese Company for $100.  There is also a very elegant Brie and Preserve tray for $50. We have brought in a few new cheeses for the holidays. We have two new Montechevre goat cheese logs. One is chevre and honey and the other is a chevre with figs. Both are $3.29 each. And I also brought in a Wenslydale with cranberry $15.29/lb. We have also brought in Le Roule Garlic and Herb cheese spread and Aloutte Roasted Sweet Pepper and Olive Tapanade Torta and their Sundried Tomato and Garlic Torta.  I also have a new local cheese for the holidays. We are stocking Brazos Valley's Von Sormon. It was created because of a mistake in the production of their Montassio. Instead of throwing the wheel of chees away Mark decided to rub the rind with cinnamon and vanilla. The taste of the vanilla and cinnamon become stronger as you get closer to the rind. We have also brought in a fig and almond cake.  It is made in Spain from Pajarero figs and Marcona almonds and is traditionally eaten along with cheese. It can be eaten by itself or on a salad. It definitely is a great component to any cheese plate. And just for New Year's Eve and Day,, I am dropping the price of the Canadian brie to $8.99/lb, it is regularly $9.99/lb.

Cleansing in the New Year

After all of the festivities surrounding this time of year it is not uncommon to feel fatigued bloated, stressed, or maybe just a few pounds heavier. Another year is drawing to a close, but there is still time for that one last party.  The meat department has plenty of offerings for your party's culinary needs. For those of you having bad luck with allergies right now, we have an exciting new item available.  Local Bee Pollen is now available for sale from the bulk department.  The pollen comes from Walker Honey Farms in the Temple, TX area (about an hour north of Austin), and it is located in the cooler next to the Health Team desk.
