Run for the board!

The Board is ramping up its annual election process, and the Nominations Committee would like to invite all Wheatsville owners to think seriously about running for a seat on the board. This is a different kind of leadership opportunity than you can find at any other organization. As a board, we are charged with acting on behalf and for the benefit of the owners of our co-op. We do this by using an incredible governance system that facilitates our leadership by focusing our energies on the "big-picture" questions, leaving the work of running the grocery store in the hands of Dan and his incredible staff. We have the great privilege of working for you, a diverse and passionate group of people who have invested in a business you believe in.

Members of the board serve three-year terms, receive a discount on purchases, and help to change the world in which we live through the perpetuation of co-op values and principles.

Summer fruit and salmon time and more!

Hello Wheatsville Friends and Fans!

Happy New Year! Yep, you heard right. Wheatsville just started our new fiscal year on Tuesday! Thanks for all your amazing support last year as we crushed sales records and exceeded our financial projections for the renovated store by a mile! We're looking forward to continues excellent growth and success this year thanks to you and the hard work of our awesome staff! Yay us!

Summer Time= Fruit Time

Texas Peaches!

For as early in the season as it is, these peaches taste like mid-season peaches. So far, the peaches from Lightsey Farms in Mexia have been so delicious and juicy that it is almost confusing. Deliciously confusing.

Berry Filled Melon Halves

We're trying out some new things with our cut fruit program. Our most recent experiment has been with berry filled cantaloupe halves. We are also offering cut watermelon halves and regular cantaloupe halves.

Stonefruits

Texas peaches get a lot of exposure, but that doesn't mean that other stone fruits are any less delicious! We're currently offering organic white peaches, organic yellow peaches and organic cherries. The cherries are starting to taste amazing and have been very juicy.

We're still waiting for nectarines (white and regular), apricots, plums and pluots.

Local Stuff

We're still getting amazing organic zucchini and squash from Martinez Farms in Pleasonton, Texas. We're also getting their organic cucumbers. Organic green beans and corn (super sweet!) are coming in from J&B Farms in Hondo, TX. The hothouse tomatoes from Alpine are getting better and better and we hope to get some field grown local tomatoes soon! We've got Texas watermelon, and as always all of our sprouts are grown near Lake Travis by the kind folks from New World Produce.

 

Fresh Copper River Sockeye salmon and great local goodies!

 

New seafood options this month! It's sockeye salmon season in the northwest and the runs are bountiful. This is due in part to excellent wildlife management by Alaskan fisheries and Monterey Bay Aquarium's Seafood Watch list that monitors population levels closely. Salmon is now on the "super green" list due to its high levels of sustainability. Salmon is easily one of the most sustainable seafood species on the planet. Meanwhile, you can pick Wild Alaskan "Copper River" Sockeye Salmon for $29.99/lb. The Salmon is shipped to Wheatsville fresh and it is never frozen. In terms of quality this is the highest tier of salmon for chefs, because of texture and robust flavor. Even in Seattle this fish can sell in restaurants for upwards of $60 dollars a plate. It's a true gem. So hustle into the store all you chefs! It's too good to last for long.

 

And that's not all that's new in the seafood counter! Everyone is aware that the disaster in the Gulf isn't going away. The ramifications of this environmental disaster will be felt long after the spill is stopped. And again New Orleans and the Louisiana fishing industry will be left to pick up the pieces. It's really heart breaking. So as our Gulf shrimp became unavailable, we've changed our sourcing for wild shrimp. As luck would have it, we found what I believe to be a better choice for the owners at Wheatsville: Certified Organic shrimp from the eastern beaches of Florida! Shrimp that are farmed are considered a farm and are in turn able to be certified organic. The process for shrimp farming isn't what you think, at least in the U.S. The shrimp farmers employ a system called "closed loop" farming. This ensures no negative environmental impact. It also produces a very clean product. We're selling 31-40 count Peeled & Deveined Organic Shrimp for $14.99/lb. They're easy to cook, since the cleaning has been done, and you pay for only usable meat. Read about shrimp on the Seafood Watch list – our product is the one at the top!

Chee Burger Chee Burger Recipes!

THE BRASSERIE

Ingredients                                                                No. of Servings: 4

  • 2 tablespoons extra virgin olive oil
  • 4 bone-in beef short ribs*
  • Salt and pepper
  • 1 small yellow onion, cut in 1-inch pieces
  • 2 cloves garlic, crushed
  • 1 carrot, peeled and cut in 1-inch pieces
  • 1 celery stalk, cut in 1-inch pieces
  • 1/2 cup port or red wine, optional
  • 4 cups unsalted beef stock or broth
  • 1 tablespoon tomato paste
  • 1/2 cup red wine vinegar
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 red onions, sliced
  • 6 tablespoons butter, at room temperature
  • 8 slices country French bread
  • 12 ounces Wisconsin Brie cheese, sliced

Cooking Directions

*Although short ribs are preferred, leftover pot roast can be substituted

For the meat: Heat a stockpot or Dutch oven over high heat. Add oil. Season short ribs on all sides with salt and pepper. Place in hot oil; brown on all sides. Remove ribs to a plate and add onion, garlic, carrot, and celery to pan, stirring to remove any brown bits from bottom of pan. Cook 5 minutes. Add wine, if using, and simmer to reduce liquid by three-fourths. Add stock and tomato paste; stir and bring to a simmer. Return ribs to pan; cover and lower heat to a bare simmer. Cook for 2-3 hours or until meat is fork-tender. (Can also be cooked in slow cooker or in a 300ºF oven.)

Drain liquid into a saucepan; remove meat from bones. Return liquid to stove and simmer until reduced by at least one-half. Pour over the meat and veggies. (Recipe can be prepared to this point a few days in advance and refrigerated. Gently rewarm meat when you are ready to make sandwiches.)

For pickled onions: Place vinegar, water, sugar, and a little salt in a saucepan and bring to a boil. Place onions in nonreactive bowl and pour the liquid over them; cover and cool.

To assemble sandwiches: Heat a skillet or sautée pan over medium heat. Melt 1-2 tablespoons butter and add 4 slices of bread. Top each with 1/8 of Brie slices, some of glazed meat and vegetables, pickled onions, another 1/8 of Brie slices, and top slice of bread. Spread 1 tablespoon butter on each sandwich top. Grill until bread is golden and cheese is melted, turning once during grilling.

THE FLAT IRON

Ingredients                                    No. of Servings: 4

  • 6 eggs
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • Pinch cinnamon
  • Pinch nutmeg
  • 2 large russet potatoes
  • Salt and pepper
  • 4 tablespoons canola oil
  • 8 slices bacon
  • 8 thick slices firm white bread
  • 4 tablespoons butter
  • 8 ounces Wisconsin Brie cheese, sliced
  • Pure maple syrup, optional

Cooking Directions

Make dipping mixture: Whisk 2 eggs, milk, vanilla, cinnamon, and nutmeg in wide bowl. Refrigerate until ready to use.

Peel potatoes and cover with cold water in pot. Season with salt. Bring to a boil; lower heat and simmer for 5 minutes; turn off burner and let sit 15-20 minutes. Drain; rinse potatoes with cold water. When cool, grate with the large holes of box grater. Heat heavy skillet, preferably cast iron, over high heat. Add canola oil; heat. Spread shredded potatoes evenly over skillet bottom. Season with salt and pepper and cook for 5 minutes or until brown on bottom. Do not stir or disturb potatoes while cooking. Using a wide spatula, flip potatoes over and brown other side without stirring.

Fry bacon in skillet until brown and crispy. Remove; drain on paper towels. Return skillet to stove over medium heat and fry remaining 4 eggs. Remove eggs to a plate. Keep warm.

Heat griddle or skillet over medium heat and add butter. Remove dipping mixture from refrigerator. Re-whisk to blend well. Dip the bread slices, one at a time, in mixture. Grill one side. Flip. Brown second side. Top 4 slices each with 1 ounce Brie, a portion of the potatoes, 1 egg, two slices of bacon, and another ounce of Brie. Top with another prepared bread slice. Continue to grill sandwiches briefly to heat the Brie, being careful not to over brown bread. Serve with maple syrup on the side, if desired.

I hope that you are having a most excellent week and that you have some fun plans cooked up for this Memorial Day weekend! Traditionally viewed as the start of summer, Memorial Day is also a chance for folks to honor those that have given their lives in service to our country. So, whether you have a picnic or trip to the lake planned or are going to a remembrance service or a parade, I hope that the holiday is a good one.

Heat oil on low heat, you don't want to burn the cheese. Once oil is heated throw in cubed Manchego (I cut the rind off). When the Manchego starts to melt, throw in finely chopped pineapple.  Stir until cheese and pineapple is fluffy, which will be around 3 to 4 minutes.

Butternut Squash Dumplings with Sausage & Kale



Coarse salt


1 pound dumplings (cavatelli) purchased from Pasta & Co.
(but any shelf stable gnocchi, raviolis, or tortellini can be used.). 

2 Tbsp olive oil 


1 lb Richardson's pork sausage (round link)


1 large onion, sliced lengthwise


3 cloves, garlic, sliced


1 tsp red pepper flakes


1 bunch kale (any type of leafy green will work)


1/2 cup white wine


2 cups organic chicken broth



Bring a large pot of water to a boil, salt the water, and cook the cavatelli (approximately 3-3 1/2 minutes, until dumplings float). 
While the water is coming to a boil, heat a large skillet over medium high heat, and place the sausage in.  Sear sausage on one side for 10 minutes and then flip over, cooking another 10 minutes until done.
While sausage is cooking, prep the onions & garlic.
Remove sausage from skillet and set aside. Saute onions & garlic in hot skillet adding red pepper flakes, salt, and black pepper.  If there is not enough oil left from the sausage, add 1-2 Tbsp.  Cook for 4-5 minutes.  
While the kale is cooking down, cut the sausage into bite size pieces.
Add the kale, toss to wilt.  Add the chopped sausage back into skillet. Add the wine and cook for 1 minute, then add the chicken stock and cook for another 4 minutes.
Add the cooked and drained dumplings, mix in.

 

For a vegan alternative to sausage in this recipe, try Field Roast's Sausages http://www.fieldroast.com.  We have Mexican Chipotle, Italian and Smoked Apple Sage for $4.99 for four huge links!  The Smoked Apple Sage would compliment this dish perfectly.  Since it is fully cooked and only needs to be heated, adjust the cooking times accordingly.

This Friday May 21st is Bike to Work Day. Bike on by to Wheatsville's breakfast station from 7-9am for some coffee, juice and treats!

Co-op Quilt on Tour!

You may notice an awesome addition to our store décor! A beautiful quilt made from t-shirts of our sister co-ops all over the country. The quily tours from food co-op to food co-op, and we have it for just a few short weeks before it goes on to its next stop. So, come check it out! Congratulations Class of 2010 from the produce department!

Congrats to all you graduates out there! If you have a graduate in your life and feel like giving them a littles something special, pick up some beautiful flowers from your produce department! We also have cut fruit and other convenient delicious items like mandarins and Wholly Guacamole pre-made guacamoles in three flavors that'll help put a little pomp into any circumstance.

What's Local in Produce

It's the beginning of our best local season, and we're already starting to feel the excitement. Currently we have blackberries from Oak Hills Farms in Poteet and blueberries from Vidor, both of which have been pretty tasty. We have organic zucchini and yellow squash from Martinez Farms in Pleasanton, and bibb lettuce from Amamdor farms. Soon we'll start to see some tomatoes and peaches coming in and that's when the fun begins.

Delicious Mangos

Both the Tommy Atkins (larger reddish ones) and the Atalufo (small yellow kidney shaped ones) mangos have been delicious the past few weeks. If you haven't picked some of these up, do it while they are this delicious!

Summer is Almost Here

Summertime really is one of our favorite times of year in the produce department. We've got plenty of berries right now, including organic strawberries, organic raspberries, organic blueberries and Texas blueberries, Texas blackberries and our in house mixed berry cups.

Melons are starting to come in, currently we have personal organic watermelons (complete with seeds fer spittin'), organic cantaloupes, and our mix melon cups.

We've got bi-colored organic corn for 89¢ and ear, and it is delicious raw, roasted, or boiled.

Stonefruit will be coming soon, so if you are missing nectarines or Texas peaches, they'll be here soon. CANNOT WAIT!

Refrigerated Fun

It is Springtime and that means we have lots of Farm Fresh good things in the Dairy Cooler.  Perhaps the most egg-citing is the return of Alexander Family Farm and H&J Ranch eggs!  They are both now graded and in compliance with local laws and we have lots and lots of them!  A dozen of Alexander Family Farm Grade A Large eggs is $4.19.  H&J Ranch has Grade A Large eggs for $4.19/dozen and Grade A Medium eggs for $3.79 (these will be here this Friday).

We now carry Way Back When Dairy's Butter. This all-natural butter is unsalted and costs $4.39 for an 8 oz tub. This high quality butter is excellent for baking.

The Goat Milk shortage is over! Since it is springtime, there were eleven kids born last week over at Water Oak Farm, supplier of our local goat milk and ice cream.  New kids means lots of milk for everyone!  Goat's milk is naturally homogenized and may be easy on those with an intolerance for the protein found in cow's milk.  A half gallon of milk is $7.19, a quart is just $3.99.

Co-op Quilt:  Our Movement's Living History

Ann Hoyt never envisioned that the stash of co-op t-shirts languishing in her dresser drawer had the potential to raise thousands of dollars, or be a catalyst for cooperation around the country.  As a director of the Urban Cooperative Initiative in Madison, WI she'd acquired quite a few of them on her travels around the country.

 

In the spring of 1997 Hoyt was searching for something to auction as a co-op education fundraiser.  The Howard Bowers Fund had been in existence for 5 years and her fundraising methods were getting "tired" Hoyt explained.  Someone suggested she make a quilt out of all the co-op t-shirts she'd gathered over the years, and auction that at the annual Consumer Co-op Managers Conference (CCMA).

 

"I didn't have time to sew, and I lack design sense," said Hoyt.  Undaunted, she enlisted the help of a few women she knew.  Anne Hopkins, a quilter who is manager of Good Food Co-op in Lexington, KY flew in to Madison, where Hoyt lives, to sew the quilt.  The quilt's designer is Anya Firszt, general manager of Willy St. Co-op in Madison.  The three of them spent four days sewing and putting it together.

 

"It was a wonderful experience.  We laughed, told co-op stories.  My husband fed us and a few friends stopped by to help," said Hoyt.  However, they did not totally complete the quilt those four days.  Keiko Sakuma-Neubauer from Kokua Country Foods Co-op in Honolulu hemmed the binding, finishing the quilt the night before the first auction in 1999.

 

Naturally, this quilt bearing the t-shirt logos of 54 co-ops caused a sensation the night it was unveiled.  From the reaction of the crowd, the quilt's creators knew they had a piece of living history that had to be shared.  "We knew this would be a nice thing to share, not kept in some stale lobby somewhere," said Anya Firszt. Auctioning the quilt for the privilege of displaying it, has given rise to the quilt traveling the country, shown at a number of food co-ops along the way.

 

"When I watch people look at the quilt, they look carefully to see what is in it, what they remember about co-ops.  I have stories for each of those t-shirts," Hoyt said.  One particular square on that quilt came about as a suggestion from Hoyt.  She had visited the Brattleboro Food Co-op in Vermont and saw a huge mobile of origami Peace Cranes they had erected one year.  "I was astounded, it was beautiful, marvelous," Hoyt said.  She suggested they make a t-shirt to commemorate the art.  They did, and it's on the quilt in the lower right-hand corner.

 

The quilt also has its own ironic legend.  "I've had so many people ask me, 'Anya, how could you work on the quilt and not even have your own store in it?" said Firszt.  Willy St. Co-op was not left out for long though, as two more "co-op quilts" were added to the auction and co-op circuit when Davis Food Co-op made one and then Hyde Park Co-op made a quilt in honor of the 70th Anniversary of their beginning in 1932.

 

In four years, the quilts have raised a total of nearly $38,000 for the Howard Bowers Fund, a co-op education endowment. They have also become an object of pride within the new-wave cooperative movement.
