Eat local challenge is a go!

Hello Wheatsville friends and fans!

Kind of a long post this week with so much stuff we're excited about!
Some short news up front, and then a whole bunch of stuff about our Eat Local Challenge!

Monthly Board meeting June 24th!
Wheatsville Monthly Board Meeting on Tuesday June 24th from 6-9pm at an alternate location The Episcopal Seminary of the Southwest 606 Rathervue place (just off Duval) look to our board agenda http://wheatsville.coop/bodagenda.pdf for more detail. Until the new offices and meeting room are completed this summer, we'll be in alternate spaces. Stay tuned for details prior to each board meeting!

Special news about July's Member Appreciation Day
You love Member Appreciation Day and we love it, too! But, with the state of our parking lot for July, we want to keep from turning Member Appreciation Day into Member AGGRAVATION Day, so we're changing it up for now. Look for a coupon in the Wheatsville Breeze that will be coming your way in early July. The coupon will give you a chance to get a 10% discount off of one shopping trip of your choice between July 14th and July 27th. That way, you still get your discount day, but we don't put undue pressure on the parking lot on one specific day. I don't know if we'll continue this for October's Member Appreciation Day, it will depend on the state of the store and how well this July one goes for all of us.

Eat Local Austin!

Wheatsville is hosting an "Eat Local America" challenge inviting you to try to consume 80% of your diet (or 4 out of every 5 meals) from food grown or produced locally.

The challenge will begin June 15th and continue through July 15th. It's an honor-based system; those wishing to participate will simply sign the large poster at the Member Center and try their best.

At Wheatsville, we define local food as food grown or processed in Texas. During the Eat Local America Challenge and throughout the year, we call attention to local food on our shelves by the bright green Locally Made signs. We also have a handy list on our website with links to local producers and the distance they are from Wheatsville. http://wheatsville.coop/local.html

Why Eat Local?

There are many benefits to eating local food. It's good for the economy, because money from each transaction stays in the region. It connects community members to the people who produce their food, while helping to support endangered family farms.

Plus, since food doesn't travel far from where it's produced, eating local also helps protect the environment by reducing carbon dioxide emissions. Local food is more nutritious and simply tastes better, because it's often harvested or processed the same day it arrives at the co-op.

Although "local" is a buzzword used by many retailers, Wheatsville has for years cultivated truly reciprocal, long-term relationships with local growers and producers, offering its shoppers a convenient connection to fresh and delicious food of the highest quality. Eat Local America celebrates our dedication and commitment to local food for consumers and our suppliers.

National Challenge Underway

Wheatsville is joining nearly 70 other natural food co-ops coast-to-coast in Eat Local America. All are members of National Cooperative Grocers Association (NCGA) --a business services cooperative representing nearly 110 retail food co-ops nationwide.

Since peak harvest time varies throughout the nation, the challenge duration may vary from a one-week to one-month period, depending where people and stores reside. Most participating co-ops will conduct the challenge based on their region as follows:

    * June 15 - July 15--South, Southwest and California
    * July 15 - Aug 15--Plains, Midwest and Northwest
    * August 15 - Sept 15--Northeast, Mid-Atlantic, Ohio Valley and Upper Midwest

Beginning June 1, food lovers can learn about all participating Eat Local America initiatives at www.eatlocalamerica.coop.

Eat Local America is not your typical challenge. Because it is framed around each region's peak harvest times, length and timing varies for each co-op, as does the definition of "local." The Eat Local America challenge celebrates the uniqueness of our regional food supplies, as well as a collective and emerging passion for eating more local, organic foods.

More About Eating Local

Although we're holding this challenge during peak season for fresh produce, we hope to educate our shoppers that it's possible -- and not too difficult -- to eat local food year-round. Fruit and vegetables can be preserved until the next harvest season, via canning, freezing and dehydrating. But don't think local is limited to produce. Wheatsville is the go-to source for local dairy products, including milk and artisan cheese, as well as eggs, meat, poultry, salsa, granola, and baked goods.

The Wheatsville Deli case is brimming with delicious treats like our cheesy, veggie Rainbow Chard Enchiladas, organic lacinato kale lightly sauteed with spicy peppers and onions, Portobello mushrooms stuffed with roasted veggies and cheese, and a refreshingly cool Chilled Cucumber Soup. We are excited at our opportunity to bring incredibly delicious local tomatoes into the Deli this season, grown and harvested by East Austin's Urban Roots, "a youth development program that uses sustainable agriculture as means to effect lasting change for youth participants, and to nourish East Austin residents who currently have limited access to healthy foods," so make sure to ask for some on your sandwiches and tacos, and don't forget to grab some fresh and spicy pico de gallo, too!
 
New in the Cheese case!!!!
 
We just got in Queso Fresco and it is a favorite already. This is a great cheese for sprinkling over salads, soups, and enchiladas due to its soft, moist, mild and crumbly nature. Perfect for the hot weather.
 
New to the case is a great flavored cheese from Cabot Vermont, horseradish cheddar.  Cabot Vermont is an awesome company because it is a farmer owned cooperative that has been very successful.  I love companies like this, they keep small family farms in business plus they are well known in the traditional grocery stores.  Supporting Cabot Vermont supports family businesses, and that is what it is all about.  

Our meat department is great for local!

Eat local! The meat department has lots of dinner opportunities that are raised locally. We have Pederson's bacon and sausages from Hamilton Texas. Pederson's pigs are hormone and antibiotic free and also Pederson's is certified humanely treated by certifiedhumane.com. 

We also carry products from Richardson's farm in Rockdale Texas. Their pasture raised pigs are hormone and antibiotic free. Richardson's farm actually feeds their hog's grains and vegetables from their farm, talk about local. 

Of course, we're always proud to promote Buddy's chicken,  which has been a favorite at Wheatsville for 25+ years. Buddy's is produced in Gonzales Texas.

One of the true gems at Wheatsville Co-op is Hugh Fitzsimmon's Thunderheart Bison from the shape ranch near San Antonio Texas. Hugh raises and harvests his animals on the pasture. Hugh sets himself and his product apart from the rest of the bison producers with very honorable and traditional practice. Allowing them to roam freely over 13,000 acres of South Texas grassland, they graze freely, fattening themselves on native grasses and mesquite beans, just as they have for thousands of years. The result is a pure source of protein that is derived from an inherently healthy animal.

Texas obviously has no shortage of beef. Finding the perfect steak still isn't that simple. I think we have a great source for grass-fed local beef with Patty Jacobs with Bastrop Cattle Company. We sell ground beef for all purpose cook of dishes, shoulder roasts for a nice slow dinner, and terrific sirloin steaks for the grill hound in all of us. Here's a great easy recipe to get you started cooking a grass-fed sirloin.

Grilling Bastrop Cattle Company meat will be fast. We do offer different thickness - ½ inch, ¾ inch and 1 inch. Know which one you're dealing with when you cook. I like to rub a little olive oil on the meat prior to cooking.You can also marinate the meat for fifteen minutes in olive oil and red wine. This will give it a slightly heavier flavor.
 
If you are using charcoal or mesquite, build your fire and wait until the flames have died down and you have very hot coals. Place your grill approximately six to eight inches above your coals.
 
Set the piece of meat directly onto the grill and over the coals. Sear on each side approximately two minutes. Then move the meat to a piece of aluminum directly over the fire. Continue to cook until the meat is done to preference. ½ inch thickness is best if you like your steak well done. ¾ inch will give you a medium. 1 inch is best if you want rare.
 
Serve with a fresh salad and grilled vegetables.
 
Of all of these companies we only carry a limited variety of their product lines. If you don't see what you want or know of a particular product you like to have ordered for you just let the Bryan or Mark in the meat department know and we'll do everything we can to help you. Many of these products are shipped to us frozen and we'll be glad to sell them to you in that state for easy moving into your freezer at home.

Father's Day and more!

Hi Wheatsville friends!

Your deli loves Dads!

Father's Day is just around the corner and your Wheatsville Deli is the place to stock up!

Feed your Dad our manly-man specials this weekend, like beef and pork Meatloaf, creamy Baked Potato Salad with bacon and green onions, and tasty green bean salads.

Check out the fresh selections in the Meat Department for specials on Coleman brisket, perfect as the center of a great dinner.  Looking for some meal starters?  The cheese department will be doing some cheese & beer pairings this weekend.  Couple these with crackers or fruit and you will have a lovely, light addition to a meal.

Grilled ahi tuna, curry lime chicken salad and flavorful lamb meatballs will be on the menu, alongside our "Fresh in the Deli" Stuffed Portobello Mushrooms – a vegetarian's dream! – and the cool, fresh Insalata Caprese, a delicious Italian-style mozzarella salad, perfect for a hot day!

Cheesy Solutions!

Here's a great, simple recipe from our cheese department for you to make your own baked brie.  Enjoy!!!!

Summer's a great time for picnics and parties, and nothing makes a get together more special than brie!  Try this wonderful recipe at your next shindig!  You'll be the life of the party!  

INGREDIENTS

  • 2 tablespoons butter
  • 1 teaspoon crushed garlic
  • 2 tablespoons slivered almonds
  • 1 (8 ounce) can sliced mushrooms, drained
  • 1 tablespoon brandy
  • 1 teaspoon dried tarragon
  • 1 (8 ounce) wedge Brie cheese, coating removed

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt the butter in a medium saucepan over medium heat. Mix in garlic and almonds, heating until almonds are lightly browned. Stir in mushrooms and cook until tender, about 5 minutes. Cover with brandy and sprinkle with tarragon.
  3. Place Brie in a small baking dish. Pour the mushroom and brandy mixture over Brie. Bake in the preheated oven 20 minutes, or until bubbly.
  4. Serve with warm baguette slices.

POCKET THEM WHILE YOU CAN
 
Petaluma, Calif.-based Amy's Kitchen discontinued a trio of frozen items earlier this month. The 20-year-old company is no longer making the Roasted Vegetable or Soy Cheese Pocket Sandwiches and the Spinach-Feta Pizza Snacks. Amy's didn't offer a reason for discontinuing the products, but it may have something to do with rising commodities prices.
 
TEXAS PASTURES HALF-GALLONS GET PUT OUT TO PASTURE
 
Texas Pastures, our state brand of Organic Valley milk, will temporarily stop packaging milk in the paperboard half-gallon containers as they prepare to move to a new production facility here in Austin. Calvin Daily, southwest regional sales manager for Organic Valley, says the new facility only produces gallons. Until the new processing plant can make half-gallons, we plan to switch to Colorado Pastures milk in half-gallons, which we can get from both of our major distributors.
 
NEW IN FROZEN: BELL & EVANS CHICKEN
 
The meat door of the frozen section has looked a little bare lately as we try to give more room to our faster-moving items. While we've been cutting many products, we feel we're missing some options for our shoppers. So save some room in your freezer for Bell & Evans Chicken Tenders and Chicken Nuggets. Family-owned and –operated Bell & Evans, based in the heart of Pennsylvania Dutch country, has been selling chickens since the mid 1890's when Howard H. This Saturday from 10-noon under the awning, sample some coffee and other treats while you talk to your board about Bylaws, the store and transformation of society. We'll even have some of our super-fine Iced Coffee available!


You say tomato, they say tomato advisory in affect...
You may have heard that there is a brouhaha right now about tomatoes. Here is the statement that we have up in the store right now based on our understanding of what's happening:
"The FDA and CDC have stated that since April a number of reported cases of Salmonella occurring in New Mexico and Texas appear to be linked to the consumption of certain types of raw red tomatoes and products containing raw red tomatoes. The specific type and source of tomatoes are not yet known, but it is believed that raw red plum, red Roma, or round red tomatoes may be the cause. Tomatoes that have not been implicated include cherry tomatoes, grape tomatoes, tomatoes with the vine still attached and home-grown tomatoes.

In New Mexico and Texas, until the source of the implicated tomatoes is determined, the CDC has advised:
persons with increased risk of severe infection including infants, elderly persons, and those with impaired immune systems should not eat raw Roma or red round tomatoes other than those sold attached to the vine or grown at home, and thank those sold attached to the vine or grown at home, 
and persons who want to reduce their risk of Salmonella infection can avoid consuming raw Roma or red round tomatoes other than those sold attached to the vine or grown at home."

The good news? We have lots of incredible local tomatoes from our friends at Green Gate Farms and Liberty Hill Farm! These are delicious and delightful and should not be shied away from! 

Please don't let the scary news keep you from eating safe and wonderful local farm or home-grown tomatoes!

Dana, our deli manager loves a brand new sausage from our friends at Richardson's Farm in Rockdale, TX. Look for the big spiral link sausage in the meat case and cook it up for breakfast (or any meal.) Dana enjoyed hers sauteed with bell peppers and onions. "It's a little breakfast-y, but so delicious! It's my favorite sausage OF ALL TIME!" This amazing sausage (and other pork products) are made from pasture-raised hogs fed from grain that they raise ON THEIR OWN FARM! The nice folks at Alexander Family Farms helped to hook us up with the Richardson's and we're so glad that they did! (Thanks KIm!)

Buddy's chicken is hormone and antibiotic free and raised without cages, with plenty of outdoor access.

DAIRY COOLER DISCOS
 
We're continuing to clean out the dairy cooler to give ourselves more room for our fastest selling items. Here's the latest list of products on their ways out.
 
White Mountain Dips -- Onion, Original and Vegetarian Barbeque (8 oz). Sales of these local products seem to have been steadily declining for months and we've been slipping as much as we've been selling of these particular flavors. We'll continue to carry the other White Mountain sauces and dips. Until they're gone, the White Mountain onion, original and vegetarian bbq tubs will be 70 cents off ($2.49, reg. $3.19).
 
White Wave Baked Tofu -- Italian and Tomato-Basil. We've been keeping a watch on these flavored blocks of tofu for a little while. While they were my introduction to tofu years ago when I first started eating natural foods, sales have been sluggish compared to our non-flavored tofus. Supplies are short, but these baked tofus will be on sale for 80 cents off ($2.49, reg. $3.29) until they're gone.
 
LightLife Smart Bacon. It appears there's just not enough demand for two kinds of fake bacon. We have been carrying both of Lightlife's fake bacons, Smart Bacon and Fakin' Bacon, but the latter has been outselling the Smart Bacon since we moved it out of the freezer and into the dairy case. Smart Bacon will be $1 off ($2.49, reg. $3.49) until we sell the last of it.
 
Sass Salad Dressings. We try to support our local products as much as we can here at Wheatsville, but Sass sales have been sluggish. We sell much more of the (also local) Mother's Cafe Tamari dressing and Sass' Sesame-Garlic dressing that we do the rest of the Sass line combined. We'll be paring the all of the Sass dressings down to give their Sesame-Garlic more room in the coming weeks. They'll be on sale for 80 cents off ($2.99, reg. $3.79).
 
BRING IT ON HOME!
 
On behalf of our local egg farmers, I'd like to thank you all for being so diligent with bringing back the Styrofoam egg cartons. Both Henry Ludwig of H&J Ranch (the white cartons) and Kim Alexander of Alexander Family Farms (the pink cartons) save about a dime each time you bring one back to be used again. Thanks again guys.
 
PLAY BALL! BOOKWHEATS VS. WATERLOO.
 
Wheatsville has teamed up with Bookpeople to play in a six-team alternative softball league with other independent Austin businesses, including The Chronicle, KO-OP Radio, Waterloo Records and Emo's. Come cheer on BookWheats (aka The Filthy Animals) as we have our season opener against Waterloo Records on Wednesday evening at 8:00 pm at Kreig Field field #4. Last fall, BookWheats rallied against Waterloo to win a four-team tournament.
 
More cool recipes from our friend, Wheatsville Owner Robbie Nelson!
 "Meatless" Meatloaf
 
1 entire package of Boca Meatless Ground burger (12 oz)
½ small green pepper
2 stalks celery
½ medium onion
1 teas olive oil
2 eggs, or equivalent egg substitute (can use Egg Replacer for vegan dish)
¼ cup dried breadcrumbs
1 TBLS milk (leave out for vegan dish)
1 teas Cajun seasoning (your favorite brand)
¼ cup ketchup
¼ teas ground chipotle chili powder
 
-Defrost "meatless" in large mixing bowl and set aside.
-Chop green pepper, celery, and onion in food processor until evenly chopped.
-Saute vegetables in olive oil in non-stick skillet over low/medium heat until vegetables are soft but not brown.  Set aside about 10 minutes to cool.
-Add veggies, eggs or egg substitute, milk, breadcrumbs, and Cajun seasoning to the meatless.  Stir well to completely combine ingredients.
-Pack mixture into greased loaf pan (I use a ceramic loaf pan).  Flatten the top with a spoon.
-Mix ketchup and chipotle powder. Spread evenly over meatless mixture.
-Bake in 350 degree oven 45 min – 1 hr.
-Let cool 5 minutes, cut into 1" slices in loaf pan and carefully remove to serve (meatloaf is slightly soft when it comes out of the oven but firms up as it cools down).
 
When Fantastic Foods stopped making their Tofu Scrambler mix, it put me in a real bind as I used that product almost every weekend.  So I looked around for some recipes that I could make myself, made my own modifications and came up with this one.
 
Breakfast Tofu Scramble
 
1 lb firm tofu, drained & crumbled
1 teas olive oil
¼ teas tumeric
¼ teas curry powder
½ teas cumin
½ teas chili powder
½ teas garlic powder
1 teas onion powder
1 TBLS nutritional yeast
Salt and black pepper to taste
4 chopped green onions, including green part
1 jalapeno, seeded and minced (optional)
 
Heat olive oil in non-stick skillet.  Add crumbled tofu and cook 5 minutes, stirring occasionally, over medium heat.  Blend next 8 ingredients in a small bowl, then add to tofu.  Stir to coat and cook about 1 minute until spices are aromatic.  Add green onions and jalapeno and stir into mixture, cook about 2-3 more minutes, then serve.
 
This makes a great filling for breakfast tacos, just add some shredded soy cheese to a warm tortilla and fill with tofu mixture and top with Wheatsville's Salsa Casera.
 
Leftovers keep well in the fridge for two or three days.
