In honor of Mexican Independence Day we have a fun end cap with everything you need to make a tasty Michalada, the popular Mexican cocktail or cerveza preparada (prepared beer) that became popular in the 1940s in Northern Mexico. Produce News

One of the great things about eating seasonally is enjoying food at its best.  You begin to anticipate new crops while at the same time fondly remembering the outgoing ones.  Soft fruit like peaches, nectarines, and plums, while still tasty, have already reached their peak and are on the decline.  More and more new tree fruit is on its way in.  USA grown pears and apples are increasing in variety and quantity, which will drive prices down and flavorful choices up.

Honeycrisp Apples are in!  A longtime favorite of Wheatsville staff and customers alike, they have a perfect sweet/tart balance with a great, crisp texture.  Even if you're not really an apple eater, I encourage you to give them a try.  These apples taste great with cheese, and we've made it easy on you and merchandized some yummy sharp New York cheddar, mild white cheddar, and mild yellow cheddar alongside our honeycrisp apple display.

Grilling season isn't over yet!

The nominations committee has worked diligently to bring you seven candidates for four open seats on the co-op's nine-member board of directors. We'll be featuring one or two of them every week until voting starts on October 1.

 

Laurie Viault has over 13 years of professional experience including ten years in product management. Laurie has an MBA from Thunderbird, the American Graduate School of International Management and a BS in Radio-TV-Film from the University of Texas. Prior to her MBA, Laurie worked in television news production as a production associate and later as an associate producer for major cable networks. Upon receiving her MBA with a concentration in global brand management Laurie went on to work in product management for major fortune 100 companies. Laurie has been an active member of the Austin community for the past 9 years donating her business skills to serve as treasurer and marketing director for several non-profit boards including the United Way Young Leaders Society as well as the Austin chapter of the American Marketing Association.

Micheladas!

 

* 1 ice cold Mexican beer

* coarse salt (for the rim)

* 1/4 cup fresh lime juice

* 1-2 dashes of hot chile sauce (such as Tabasco or Cholula)

* 1 dashes of soy sauce

* 1 dashes worchestshire sauce

* beer mug or large glass (chilled if possible)

* Ice

* lime wedge for garnish

 

Preparation:

Salt the rim of the glass by wetting the edge with some of the lime juice then dipping it into a plate with salt on it. Now fill the glass about half way with ice and pour in the lime juice, chile sauce, soy sauce and worchestshire sauce. Mix with a spoon then slowly pour in the beer to the top of the glass. Push the lime wedge onto the edge and serve immediately. When you have a few drinks, pour the remaining beer into the cocktail.

Variations include chili powder on the rim of the glass, pickled okra, salsa, clamato juice, black pepper, Tabasco and even Cooked shrimp!

These are recipes from Rick Bayless' cook books.  We have a wonderful asadero cheese to top these enchiladas and tacos. You can find the achiote paste at any Mexican market.

Pork Tacos al Pastor

Ingredients

A 3 1/2-ounce package achiote paste
3 canned chipotle chiles en adobo, plus 4 tablespoons of the canning sauce
1/4 cup vegetable or olive oil, plus a little more for the onion and pineapple
1 1/2 pounds thin-sliced pork shoulder (1/4-inch-thick slices are ideal—the kind Mexican butchers sell for making tacos al pastor)
1 medium red onion, sliced 1/4- inch thick
Salt
1/4 of a medium pineapple, sliced 1/4-inch-thick rounds
20 warm corn tortillas
About 1 1/2 cups raw tomatillo salsa


Directions

1.  Marinate the meat. In a blender, combine the achiote paste, chiles, canning sauce, oil  and  3/4 cup water.  Blend until smooth.  Use 1/3 of the marinade to smear over both sides of each piece of meat (refrigerate the rest of the marinade to use on other meat or fish).  Cover and refrigerate for at least an hour.

2.  Grill and serve. Light a charcoal fire and let the coals burn until covered with gray ash but still very hot; bank the coals to one side and set the grill grate in place.  Or, heat one side of a gas grill to high. Brush both sides of the onions slices with oil and sprinkle with salt.  Lay in a single layer on the hot side of the grill.  When richly browned, usually just about a minute, flip and brown the other side; move to the cool side of the grill to finish softening to grilled-onion sweetness.  Oil and grill the pineapple in the same way.  Finally, in batches, grill the meat:  it'll take about a minute per side as well.  As the meat is done, transfer it to a cutting board and chop it up (between 1/4- and 1/2-inch pieces).  Scoop into a skillet and set over the grill to keep the meat warm.   Chop the onion and pineapple into small pieces as well, add them to the skillet and toss everything together.  Taste and season with salt, usually about 1/2 teaspoon.  Serve with the tortillas and salsa for your guests to make soft tacos.

Enchiladas Cremosas de Pollo, Estilo Cafe Tacuba

 

Serves 4 to 6


Ingredients

2 fresh poblano chiles
1 cup (lightly packed) roughly chopped spinach leaves
2 cups milk
2 cups chicken broth
6 tablespoons (3 ounces) butter—or you can use vegetable oil
3 garlic cloves, peeled and finely chopped
1/2 cup flour
Salt
3 cups coarsely shredded cooked chicken (I usually use a rotisserie chicken or leftover grilled chicken)
12 corn tortillas
A little vegetable oil for brushing or spraying
About 1 cup Mexican melting cheese (Chihuahua, quesadilla, asadero or the like) or Monterey Jack, brick or mild cheddar
A little chopped cilantro for garnish


Directions

1.    Make the sauce. Roast the poblanos directly over a gas flame or on a baking sheet 4 inches below a very hot broiler, turning regularly, until the skins have blistered and blackened on all side, about 5 minutes for an open flame, about 10 minutes under the broiler. Place in a bowl, cover with a kitchen towel and, when handleable, rub off the blackened skin, tear open and pull out the seed pod and stem. Quickly rinse to remove any stray seeds or bits of skin. Roughly chop and put in a blender jar.  Add the spinach.

In a medium (3-quart) saucepan, combine the milk and broth, set over medium-low heat to warm.

In a large (4-quart) saucepan, melt the butter (or heat the oil) over medium.  Add the garlic and cook for a minute to release its aroma, then add the flour and stir the mixture for a minute.  Raise the heat to medium-high.  Pour in the warm broth mixture and whisk constantly until the sauce boils.  Reduce the heat to medium and simmer for 5 minutes.  Remove from the heat.

Pour half the hot sauce into the blender with the chiles and spinach.  Cover loosely (I remove the center part of the lid, secure the lid, then drape a cloth over the whole thing) and blend until smooth.  Pour the mixture back into the saucepan with the remaining sauce.  Taste and season with salt, usually about 2 teaspoons.

2.    Finish the enchiladas. Heat the oven to 350 degrees.  Smear about 1/4 cup of the sauce over the bottom of each of four to six 9-inch individual ovenproof baking/serving dishes or smear about 1 cup of the sauce over the bottom of a 13x9-inch baking dish.  Stir 1 cup of the sauce into the chicken.

Lay half of the tortillas out on a baking sheet and lightly brush or spray both sides of the tortillas with oil; top each tortilla with another one and brush or spray those with oil.  Bake just to warm through and soften, about 3 minutes.  Stack the tortillas and cover with a towel to keep warm.

Working quickly so that the tortillas stay hot and pliable, roll a portion of the chicken up in each tortilla, then line them all up in the baking dish(es).  Douse evenly with the remaining sauce and sprinkle with the cheese.  Bake until the enchiladas are hot through (the cheese will have begun to brown), about 20 minutes.  Garnish with the cilantro and serve without hesitation.

Chiles! Chocolate! Wine and more!

Hi Wheatsville friends and fans! We've been having a great September so far and I hope you have, too! This break from 100 degree weather gets us in the mood for heartier fare and cooking! Woo hoo! Greetings from the produce department!

This is Adam King, the new produce manager at Wheatsville.  I'm still getting settled in here in the produce department, so bear with me!  I hail from Albuquerque, New Mexico, where we eat chile, not chili.  We do have some yummy hatch green chile in the produce department, which makes me think of home.  These days, you can't drive down the street in any New Mexico city without smelling the lovely aroma of roasting green chile.  To me, it's the smell of the end of summer, and the approach of autumn.

I think roasted chile is better than any other preparation, and this technique can be applied to any chile pepper (jalapeƱo, Serrano, poblano, even regular old bell peppers).  Unfortunately, this method requires a gas stovetop.  If you don't have a gas stovetop, you could use a barbeque grill.  You also need one of those collapsible vegetable steamers and a pair of cooking tongs.

Open up the vegetable steamer and set it on top of your gas burner.  Put a couple green chiles on it, and turn the burner to a medium-low heat.  Using the tongs, turn the peppers over every 10 seconds or so.  The pepper is cooked when the skin dries slightly and begins to separate from the flesh.  Remove the peppers from heat and let them cool.  When cool enough to handle, peel the skins and remove the seeds.  Chop them up and eat them any way you please!  My favorite applications are atop a hamburger or turkey sandwich, or stuffed to make chiles rellenos.

The Wild Side of Rice

This is Riley in the bulk department here to put the spotlight on the wonderful and organic Canadian Wild Rice we have available in bulk. Wild rice is actually the grain harvested from a grass that grows in shallow water, and ours comes from North Bay Trading Co. which harvests theirs from the lakes of northern Canada. Wild rice is a very nutritious and versatile grain and definitely worth giving a try. I've included a simple soup recipe if you're interested:

TEMPEH WILD RICE SOUP

1/2 c. uncooked wild rice

3/4 c. chopped celery

1/2 c. chopped onion

2 cloves chopped garlic

1/3 c. green pepper

1 package Lightlife Smokey Tempeh Strips

18 med. fresh mushrooms

6 cups vegetable stock

2 cans cream of mushroom soup

Salt and pepper to taste

Wash and boil wild rice for 15 minutes. Drain and set aside. Fry tempeh, crumble and set aside. In the same pan, saute celery, onion, garlic, and green pepper until tender. Combine rice, soup, broth, sauteed vegetables and sliced mushrooms. Simmer together 2 hours.

I know this is not a statement to make lightly but OMG the Chocolove Almonds & Sea Salt in Dark Chocolate is the best chocolate bar I have ever had! Chocolove knows how to do dark chocolate right…..very dark yet very smooth and creamy. They add the right amount of coarse sea salt crystals and almond pieces that complement each other. Rather than adding salt uniformly throughout the bar, there are little bursts of sea salt that really accentuate the toasty flavor of the almonds. BONUS: a lovely love poem is included in every bar. It's usually something by Lord Byron or Keats but I think that someone needs to write an "Ode to the Almonds & Sea Salt in Dark Chocolate Bar". These bars are on sale through Tuesday the 14th, so buy a case of 12 and hand them out to friends, strangers and the ones that you love (and buy a secret case to hide under your bed)

Mark Wochner moved to Austin in early 2006 to accept a position at UT researching acoustics and became a member of Wheatsville and The Black Star Co-op soon afterward. In October of 2008 he was elected to the Board of Black Star and in August 2009 he was elected its president. He is also active in the co-op community as a member of the Austin Co-op Think Tank and as a regular visitor to Wheatsville's monthly Board meetings. He is a regular cook and home brewer and in his remaining spare time he performs around town on the trumpet and bass guitar with both the singer/songwriters Vanessa Lively and Mauricio Callejas. He has a PhD in Acoustics from Penn State University and a BA in Physics from Vassar College.

Hi Wheatsville friends and fans! We've been having a great September so far and I hope you have, too! This break from 100 degree weather gets us in the mood for heartier fare and cooking! Woo hoo! Greetings from the produce department!

This is Adam King, the new produce manager at Wheatsville.  I'm still getting settled in here in the produce department, so bear with me!  I hail from Albuquerque, New Mexico, where we eat chile, not chili.  We do have some yummy hatch green chile in the produce department, which makes me think of home.  These days, you can't drive down the street in any New Mexico city without smelling the lovely aroma of roasting green chile.  To me, it's the smell of the end of summer, and the approach of autumn.

I think roasted chile is better than any other preparation, and this technique can be applied to any chile pepper (jalapeƱo, Serrano, poblano, even regular old bell peppers).  Unfortunately, this method requires a gas stovetop.  If you don't have a gas stovetop, you could use a barbeque grill.  You also need one of those collapsible vegetable steamers and a pair of cooking tongs.

Open up the vegetable steamer and set it on top of your gas burner.  Put a couple green chiles on it, and turn the burner to a medium-low heat.  Using the tongs, turn the peppers over every 10 seconds or so.  The pepper is cooked when the skin dries slightly and begins to separate from the flesh.  Remove the peppers from heat and let them cool.  When cool enough to handle, peel the skins and remove the seeds.  Chop them up and eat them any way you please!  My favorite applications are atop a hamburger or turkey sandwich, or stuffed to make chiles rellenos.

If chile isn't your thing, don't worry!  Several new varieties of pears have just arrived: Organic Star KrimsonBosc, and Tosca Pears have joined the Bartletts on our displays.  These are all new USA crop pears, much better than the South American varieties that've been in storage for so many months.  Speaking of new USA crop tree fruit, you'll see more and more USA-grown organic apples on our shelves in the coming weeks.  You'll find organic Washington Ginger Gold Apples and 3lb bags ofWashington Gala Apples right now, with more to come.

Board Candidates of the Week

 

The nominations committee has worked diligently to bring you seven candidates for four open seats on the co-op's nine-member board of directors. We'll be featuring one or two of them every week until voting starts on October 1.

 

Born and raised in Harlingen, in South Texas, Adrian Cortez attended Yale University. He then spent time in Shanghai, working on investment projects and business development on projects that took him on extended stays in England, Bosnia and Serbia, Korea, India and Hong Kong. Adrian has also spent time on charity projects in China and North Korea. He currently resides in Austin with his wife and two dogs.

 

Steven Tomlinson currently serves as Treasurer of the Wheatsville Board of Directors. He teaches entrepreneurship at the Acton School of Business and consults with Fortune 500 companies on communication skills and strategies. In addition he is an accomplished theatre artist whose one-man shows explore spiritual questions about business and technology.

Morningland Cheese Voluntary Recall Notice

Yesterday we received word that Morningland Dairy was voluntarily recalling 69,000 lbs of their cheese after their Hot pepper Colby and Garlic Colby tested positive for lysteria bacteria by the California Department Of Health. Though it was only two flavors of the cheeses Morningland has volunteered to re-call all of their cheeses, and is having their cheeses tested by the Missouri Department of Health as well. Howdy from Bulk!

But wait Mr. Meat man, what's Dr. Grandin 21 point animal welfare approved?  Dr. Temple Grandin has been working with ranchers to improve animal conditions since the mid-seventies.  Some of you might know her from her equally profound work in treatment and diagnosis of autism.  Dr. Grandin began to create at welfare certification consisting of 21 points to assure livestock physical and mental well-being. It was first adopted by Niman Ranch, and has become an ambitions benchmark for rancher and farmers to follow industry wide. The check list is long, but to those of you who are interested I'd be happy to print you a copy. Here are a couple of examples.

  1. There must always be a dry area where all animals can lay down at the same time without becoming soiled on the belly
 

20. Certified farmers and ranchers must raise animals in a manner that protects or enhances the quality of the environment, animal health and public health.   This includes, but is not limited to manure management practices, stocking densities, and methods for disposal of mortalities, which must meet all county, state and federal standards

Sunburst Squash Pizza recipe from our new Produce Manager Adam King

We're delighted to welcome our new produce manage Adam King to Austin. Previously, he was tending the produce department at La Montanita co-op in Albuquerque. So, say hi to Adam when you see him and enjoy this easy recipe that he was talking up this week!

Sunburst Squash Pizza

Take a local sunburst squash and cut a small amount off the bottom to create a flat spot to set the squash down on.

Cut the top of and scoop out the seeds.

Put a dollop of your favorite pizza or tomato sauce into the scooped out part.

 

Add some mozzarella.

Put it on a lightly oiled baking sheet and Bake at 400 until the cheese is nice and melty!
