The Super Bowl is this week, and I just want to put a few Ideas out there that I feel will make your Super Bowl   party a little more Super. We will have already prepared cheese trays for 9.99 for your snaking pleasure. Tired of queso that is not made of queso. I have all the cheese you need to make Super Bowl worthy  Chile con Queso and Queso Flameado.  I also have Sliced cheeses for those Super Submarine Dagwood sandwiches.  If pizza is more your style I have an Italian Four cheese shred, Fresh Mozzarella, a fabulous locally made Fresh Mozzarella, Feta and a nice selection of bleu cheeses to top your pizzas. February might be short, but your Co-op Deli is looong on tasty treats and owner specials, too!

This month, we have two fabulous Fresh In The Deli recipes ready for you to try, one of which also boasts lots of our featured cheese of the month – Parmesan! Considered one of the world’s great cheeses, Parmesan cheese is the name commonly used for a group of very hard cheeses. Produced from cow’s milk and aged at least two years Parmesan is a granular brittle cheese that develops a rich and savory flavor and is commonly used in grated form, but also tastes amazing broken into chunks as a salty snack or a fancy cheese course to follow your meal!

From Viroqua Food Co-op in Viroqua, Wisconsin, we have Tomato Dill Pasta Salad with Parmesan and Mozzarella! This penne pasta salad combines sweet cherry tomatoes, salty Parmesan, creamy mozzarella, fresh dill, garlic and Kalamata olives to create a deliciously simple balance of flavors.

And from First Alternative Natural Foods Co-op in Corvallis, Oregon, we have the incredible Black Forest Cookies! Chewy and crispy at the same time, this vegan cookie is reminiscent of the classic cake with a flavorful combination of bittersweet chocolate and tart dried organic cherries. They are amazing!

We have lots more for your February pleasure, including our salsa of the month – the newly revamped and tastier than ever Ancho Bomb! This one is a winner, with the smoky taste of ancho chiles melding with sweet roasted red bell peppers and orange juice! It’s a gorgeous sunset-red salsa that would be great spooned over simple chicken or fish, and tastes great with chips or over some rice and beans, too!

Our Valentine’s inspired smoothie of the month is Chocolate-Covered Strawberry, blending strawberries with cacao nibs, and a hint of vanilla! Triple yum, and all that frozen goodness for just $4.99!

Need something to pair with your morning coffee? Well, our locally-made Sweetish Hill Cinnamon Rolls are also on Owner Special, and they are amazing! And amazingly huge! These tender, light rolls are swirled with cinnamon sugar for a just-sweet-enough chew and would most certainly hold up to repeated latte-dunking!

And don’t even think about forgetting next weekend’s Valentine’s Day excitement!  RECIPES

Chile Con Queso

Small yellow onion

4 Jalapenos

1/3 lb of Cheddar

1/3 lb of Pepper Jack

1/3 Asadero

½ Gallon of Whole Milk

Cumin

Chile Powder

Garlic Powder

Dice Onion and Jalapeno sauté until onions become translucent and set aside. You will be adding this to the queso at the end.

Dice Cheeses and heat milk using a double broiler technique heat milk and add cheeses slowly constantly stirring them in. As you are stirring add cumin, chile powder and garlic powder to taste. Go lightly on the cumin. Cumin can quickly overpower any dish. So add it sparingly, constantly tasting. When all cheese has melted in add onions and jalapenos.  You do not have to use all the milk at once. If at the end you find the queso too thick add a little more milk until the consistency meets your taste.

 

Queso Flameado

Small Yellow Onion

1 lb of  Wheatsville in House Chorrizo

½ lb of Asadero cheese

Remove Chorizo from casing . Slice onions and sauté until onions are translucent add chorizo  and cook. Shred the Asadero add to Chorizo and onions. Turn down heat and stir until cheese is melted. Ready to serve.

We are getting SO much positive feedback these days, it's almost overwhelming (but we love it!) People blog about us, write glowing Yelp reviews and even tell us in person. Every once in a while, i like to share a sampling of the good cheer:

A lady came to the Hospitality Desk today to make a return, and she let me know that everybody at WV is soooo nice to her and that she considers us her oasis.  She comes here to get away from the world when she's feeling down or stressed.
 
Another lady who used to live here came in and was happy to find out that we still had her ownership account on file.  She hadn't been here in five years and said that seeing the renovated store was making her have the urge to move back to Austin.

 Applegate Greatest Little Smoky Cocktail Frank (YEP. that really is the name...)—12oz pack $8.99. Great snacking item, and are great slow cooked in BBQ sauce of your choice. Sauté links for 5 minutes, add water and BBQ sauce cook at 200 degrees for 1 hour for tasty tender treats.
 
Louisiana partially cooked crawfish tails $19.99 lb. After Katrina most of the Louisiana seafood industry found its self in a dire situation--limited fishing boats, decimated fish, and oyster, shrimp, and crawfish levels. This put the Louisiana seafood industry in a make or break situation. Recovery has been slow and it's still not clear if it will completely bounce back. Purchasing these little crawdaddy tails is a vote to keep a long tradition of gulf coast seafood available for future generations to enjoy. It's also a sustainable resource like everything else we source. It can be found on the best choice list form seafood watch list. (And, for all you Saints fans. WHAT else are you gonna eat? Who dat gonna eat some Crawfish tails?)

This week's customer request focus is on Eden Foods Organic Canned Tomatoes. Eden Tomatoes are organically grown on a third generation family farm in the Thames River Delta of southern Ontario, Canada. They are always ripened on the vine, then taken immediately after harvesting to their processor just 45 miles away, where they are cleaned, uniformly small cut (referred to as fancy cut), and cooked within hours of harvest to capture their garden fresh flavor. What's Local in Produce
Right now in produce, there are some great local items available. Citrus from the valley is still coming in, mostly in the forms of marrs juicing oranges, valencias and rio star grapefruit. From Martinez Farms in Pleasanton, we are getting some beautiful little lettuces (red and green leaf, and romaine) that are certified organic and tender. We have triple washed baby spinach from Oak Hills Farms in Poteet and mustard and collard greens from Naeglin Farms in Lytle, TX. As always, we have wonderful hydroponic bibb lettuce from Amador Farms in Dripping Springs and a great variety of mushrooms from Kitchen Pride in Gonzales.
 
Savor the Season
Citrus is still coming in strong and tasting better and better. This week  we have organic gold nugget tangerines, which are really sweet and only have a few seeds, organic cara cara oranges—these are off the HOOK!!—delicious organic valencias that are super juicy, organic meyer lemons, organic kumquats (my favorite thing in the world to sample to children, the expression on their faces when the tart skin hits them before the sweet finish, is priceless!), phatty organic Rio Star grapefruits, plump and sweet organic navel oranges, key lime bags, organic lime bags, clementines and bags of organic Texas juicing oranges! This has been a great citrus season, so don't miss out—come get some!
 
Fair Trade Avocados
We are still getting the delicious fair trade organic avocados. Fair trade produce is a big deal, and even better when organic! Fair trade products aim to ensure that producers are being compensated with a better price than large agribusiness wants to pay. This is good for the farmers and their community and us by having an ethical option available. YUM.
 
Captain Greg of Cheese island reporting: I am sad to say that the Rogue River Blue is done for the year. I hope that you were able enjoy this marvelous cheese. Luckily we will be able to get in some of the Bosque Blue when it finishes aging. Just a reminder we still stock olives on Cheese Island and I am looking to bring in other olives.

We've had many requests for Indian Naan bread but have been unable to find it available from any of our distributors. Recently, though, we discovered that Tandoor Chef (makers of delicious frozen Indian meals) offers an all-natural Garlic Naan. So we brought it in immediately and it is now in the freezers with the other Tandoor Chef items. This Naan bread is made from scratch and baked in a clay-oven then covered in chopped garlic—yum! We'll keep searching for Naan to have on the bread shelves but this one is tasty and now available!

Way Back When is WAY back

We know you have missed it.  We have too.  Its absence from our shelves has been sorely felt.  You've been asking about it every day , and have  been told, "Soon."

What is "it"? 

It is milk from Remember When Dairy, now known as Way Back When Dairy.  This milk is locally made, non-homogenized and pasteurized at a low temperature.  It is Austin's favorite milk and starting this Saturday evening , January 16th, you will be able to find it once again at Wheatsville.    We will be selling gallons of Whole Milk and 2% milk for $5.69 and half gallons of Whole milk and 2% milk for $3.59.

Wooo! School's back, the weather has warmed up and it's time to chill out!

Niman ranch Canadian bacon. This product is useful in the kitchen. Of course, it's great on pizza and one of my favorite toppings.  It is also relatively lean so you can substitute when recipes call for bacon, such as seasoning in beans or topping in salads.
 
Thunderheart Bison lean stew meat. What do I need to say about this that fans of Thunderheart products don't know already. High Omega 3's, low cholesterol---lot's of flavor. From the Bloomingfoods Market & Deli in Bloomington, Indiana comes a lovely Creamy Saffron Pasta Salad for our full-service Deli case. We toss bow-tie pasta and red kidney beans with red peppers, green onions, basil and oregano, then add a white wine-garlic mayonnaise made with a pinch of saffron to create a pasta salad with a distinctive flavor and a beautiful color. It has been a hit!!
And from Mountain View Market, Las Cruces, New Mexico comes an absolutely delicious instant staff favorite – Green Chile Hummus! Green chiles add a spicy and fresh twist to this classic Middle Eastern spread. We blend traditional chickpeas, tahini, lemon juice, olive oil and garlic with both hot and mild green chiles. Fantastic as a dip or sandwich spread, you can find this item in our self-service grab'n'go case!

And there's still more new treats for January to try! Our spicy salsa of the month is yet another staff favorite! Chicken out
I have some bad news, folks. The winter can be the roughest time of the year for some of our ranchers and farmers.  Because of this, we will have limited or no product on certain items. Dewberry Hills Farm, bless their hearts, are struggling right now to keep chicks alive with the freezing temperatures. In fact, I was just talking to  Jane (who owns Dewberry farms with her husband) and she said that Terry and her are waking up every 2 hours at night to rotate the propane heaters used to keep chicks comfortable. It take some real dedication to be so committed. That's what we love about them. So, we'll have a limited number of Dewberry Hill farms arriving on Tuesday the 19th.
Patty Jacobs, from Bastrop Cattle Company, is also having trouble meeting demand. Unfortunately, we may or may not see product from her next week.
We do try our hardest to work with our local ranchers and farmers and we appreciate all of the support that our customers have given them as well.  We will be looking for alternatives during this time in order to keep supplying you with the best quality products that we can find.

Pure Luck will be taking a hiatus from our shelves while their goats are kidding. We still will be getting in their Hopelessly Bleu. If you are looking for a local chevre in the meantime , we do have the Wateroak Farms Chevre. It is creamier than the Pure Luck, not as cakey, but just as delicious.  Enjoy!!!

Local Organic Lettuce
We currently have organic romaine, green and red leaf lettuces from Martinez Farms in Fredericksburg, Texas. These lettuces look very nice and the heads are a decent size. Get'em while supplies last.
 
Organic Girl Salad Kits
Organic Girl salads are a big hit among our staff members and customers. We are currently carrying their Caesar and Berries and Balsamic varieties. They use an 100% recycled container and are DELICIOUS! Check'em out.
 
Citrus!
We are really in the thick of it now—citrus season is here. We currently have some great cara cara oranges, Texas Valencia oranges, Rio Star grapefruit, Satsuma tangerines and clementines. This has been a great citrus season so far, and there are still more varieties on the way.
 
Trim
Due to increase in our demand for our daily produce trimmings, we are switching to a first-come, first-serve basis. We will place the bags of trim outside of the produce receiving door for your convenience. Thank you for your cooperation with this change.
